2 medium sweet potatoes, peeled and cubed
3 tbsp olive oil
1 (15 oz) can garbanzo beans
3 tbsp tahini (sesame seed paste)
2 garlic cloves, pressed
1 chipotle pepper, canned in adobo sauce
4 tsp adobo sauce
juice of one fresh lemon or lime
1 tsp ground cumin
1/4 tsp ground coriander
1/2 tsp smoked paprika
Salt and pepper to taste

1. In a medium saucepan, bring water to boil and add sweet potato cubes.
2. Simmer until sweet potatoes are soft, about 10 minutes. Drain and rinse under cold water. Transfer to food processor.
3. Combine all ingredients in food processor. Blend until smooth, adding reserved garbanzo bean liquid until desired consistency is reached.
4. Top with smoked paprika and parsley and enjoy!
